Ensure surface of counter is well coated with flour or icing and that the dough can freely move around on the counter before cutting. This allows for a cleaner cutting edge.
Coat the cutters generously with flour or icing sugar before cutting the dough to allow for easier releasing of the dough.
Use a thin knife or spatula to lift the cookie off the counter and transfer to baking sheet.
